Yes, you can deselect all of the questions at once when creating a quiz. Once you've selected the topic or topics that you want to use, click the All Questions filter on the Choose Questions page:

This will deselect all the questions so you can go through and select only the ones you want. Select a question by clicking on it. Preview a question by clicking on the magnifying glass on the right.
